POSITION: CONFECTIONARY MANAGER

About the Position:

A confectionery manager oversees all aspects of a confectionery production facility, including managing staff, ensuring quality control of sweets and chocolates, planning production schedules, maintaining inventory, and adhering to food safety regulations, with the primary goal of producing

high-quality confectionery products

while meeting operational and financial goals.

Working Conditions:

Overtime hours are not applicable for this position

Number of positions: One

Location of position: KwaZulu - Natal

The position will be responsible for but not limited to:

Production Management:



Oversee the daily production process, including mixing, moulding, decorating, and packaging of confectionery items.

Develop and implement production schedules to meet customer demand and seasonal fluctuations.

Monitor quality control standards throughout the production process, ensuring consistency and compliance with food safety regulations.

Identify and troubleshoot production issues, implementing corrective actions to maintain efficiency. Managing the supreme recipe and controls.

Managing the Waste, which needs to be below 1% per month.

Managing and mitigate Overtime and breakdown preventative measures.

Managing departmental budgets.

Manage Primary Subordinates and budget, all Production, Wrapping and Dispatch.

Manage Stores on a day-to-day activity.

Factory needs to be kept clean on a prestige standard inside and outside.

Apply knowledge and skills to manage Production Managers and ensure the effective and efficient functioning of the production process for all product lines.

Drive "Safety First" culture.

Ensure that financial responsibilities (cost of materials, Waste, general labour, paraffin, consumable goods) are maintained as prescribed by the Chief Executive and Chief Operational Officers.

Work and communicate effectively with Production Managers and other Managers in the production process (Technical Managers; Quality Control Managers; Food Safety Managers, etc.) in order to maintain total control over the production process (documented meetings, emails).

Utilize knowledge and skills to ensure that the quality of products produced meets the company's and customer quality standards.

Staff Management:



Lead and supervise a team of confectioners, including bakers, decorators, and packaging personnel.

Train new employees on proper techniques, safety procedures, and company standards.

Assign tasks, monitor performance, and provide feedback to staff.

Manage employee schedules and timekeeping.

Inventory Control:



Monitor raw material inventory levels and place orders to maintain adequate stock.

Manage finished product inventory, ensuring proper storage and rotation

Track production yields and control of issuing against recipes

New Product Development:



Collaborate with the quality and research & development team to create new confectionery items and Flavors

Conduct taste tests and gather feedback to refine recipes

Introduce new products to market while maintaining brand consistency when necessary

To be successful in this role you will need to meet the below requirements:



Grade 12 or Equivalent

A degree in Culinary Arts, Business Management, or a related field is preferred.

Proven experience as a bakery manager or in a similar role within the food industry for at least 3 years

Strong knowledge of baking techniques, recipes, mixes, and food safety standards.

Excellent leadership and team management skills.

Strong organizational and time management abilities.

Exceptional communication skills.

Ability to work in a fast-paced environment and handle stress effectively.

Flexibility to work early mornings, night shifts, weekends, and holidays as needed.
