Job Summary Establishment in Johannesburg West is looking for an experienced Senior Restaurant Manager. Purpose of the position: Upmarket restaurant is looking for candidates with 6+ years restaurant management experience, of which 5 or more years must be as senior manager or GM. Must have a good understanding of general Restaurant operating procedures. Duties and responsibilities: Ability to manage a Restaurant front and back of house. Must be skilled in staff management / training, stock management, opening & closing procedures. Duties will also include restaurant administration Managing Budgets, inventories and negotiate prices with vendors To maximize restaurant sales and profitability by effective deployment of labour, assets and production costs To maximize the profitability of the restaurant by monitoring food, packaging and labour costs as well as controllable expenditure to ensure that these are in line with established targets Ensure that all restaurant resources, i.e. Labour, product, supplies, tills and equipment are at correct levels to meet the various volumes of business Ensure that all cash handling and in-restaurant banking procedures are always adhered to Do a daily, weekly and monthly stock check in the restaurant To ensure that the correct level of supplies are ordered, deliveries checked and that stock levels are monitored on a daily and weekly basis and any discrepancies fully investigated and reported
