Franschhoek, Cape TownA luxury wine estate in the Franschhoek area is seeking a talented and experienced Senior Sous Chef to join their dynamic culinary team. This upmarket estate is renowned for delivering an exceptional dining experience, blending fine cuisine with world-class wine.The ideal candidate will have a strong background in high-end, high-volume kitchens and a passion for crafting exquisite dishes using the finest local and seasonal ingredients.Key Responsibilities:

  • Assist the Executive Chef in managing the daily kitchen operations, ensuring consistency and excellence in food quality and presentation.
  • Lead and inspire the culinary team, providing guidance, training, and support to maintain high performance.
  • Oversee food preparation and cooking, ensuring all dishes meet the estate's fine dining standards.
  • Maintain exceptional hygiene and safety standards, ensuring compliance with health and safety regulations.
  • Contribute to menu development, incorporating innovative techniques and fresh, seasonal produce.
  • Monitor stock levels, oversee ordering, and control food costs to maintain profitability.
  • Ensure smooth service during busy periods, particularly in high-volume settings.
  • Collaborate with the front-of-house team to ensure seamless communication and outstanding guest experiences.
Requirements & Qualifications:
  • Minimum of 5+ years' experience in a high-end, high-volume kitchen, with at least 2 years in a Senior Sous Chef role.
  • Recent experience in an upmarket fine dining or luxury hospitality environment is essential.
  • Strong leadership skills with the ability to motivate and develop a team.
  • Excellent organisational and time-management abilities, with a keen eye for detail.
  • A passion for high-quality ingredients, innovative cooking techniques, and delivering an unforgettable dining experience.
  • Ability to perform under pressure in a fast-paced, busy environment.
  • Strong knowledge of kitchen hygiene, health and safety standards.
  • Culinary qualification from a recognised institution preferred.
