Job Description

Position criteria:
Seeking a Senior Sous Chef who is passionate about their craft and who has a strong attention to detail. You will be partnering with the Head Chef in running daily operations of the Hotel culinary offering. The Senior Sous Chef will assist the Head Chef in creating contemporary dishes on the seasonal menus, which must be inspired by South African flavours but reflect the chefs own creative flair. Dishes should reflect elements of heritage. Good knowledge on Western Cape and South African food heritage will be an advantage.

• Relevant experience and accreditation as a Sous Chef with at least 5 years experience at 5-star level
• Up to date with food and beverage trends and best practice
• Experience in estimating food consumption, purchases of foodstuffs and kitchen supplies within the allocated budget
• Experience in managing a kitchen inventory and ensuring that supplies are fresh and of high quality
• Have strong organisational skills and an ability to multitask and to work under pressure, with a high level of attention to detail
• Ability to effectively manage the kitchen staff, motivate them and assign duties fairly to set standards, procedures, hospitality rules and sanitation requirements
• Familiarity with the best practices in the hotel and catering services industry
• Knowledge of health and safety standards
• Possess a professional disposition with good communication and interpersonal skills
• Preserve excellent levels of internal and external customer service
• Willing to work flexible working hours subject to the demands of the business
• Ability to thrive and work under pressure, with high-level multiple tasking abilities
• Be an energetic and level-headed individual who works well as a team player

Skills, Experience & Educational Requirements

• Completed formal culinary studies at a reputable hospitality school
• Ability to communicate effectively in English both verbally & written is essential
• Excellent numeracy skills
• High energy levels coupled with a positive attitude
